The second day of the Good Food Festival brings a varied program that includes a workshop on preparing hrostule by the Deša Association, followed by a workshop on preparing the forgotten Dubrovnik cake Manđarica which will be held by gastronomy expert Jadranka Ničetić and Cordon Bleu confectioner Lucija Tomašić. Certified vegan chef and expert on healthy eating Tereza Poljanić will hold the first of her workshops titled ˝Hello Tereza˝, which will be dedicated to preparing vegetarian brunch or dinner. The highlight of the second festival day is Dinner with Chef Ivan Pažanin at the Porat restaurant. The events of the second day of this year's Good Food Festival bring us the taste of Dubrovnik from the past, but also of the Dubrovnik of the present through traditions that need to be preserved, as well as some new trends that are also an investment into Dubrovnik’s gastronomic future.


A workshop on preparing hrostule will take place beginning at 10 am in the Deša Association’s space in the Lazaretto. In Dubrovnik crunchy, sweet hrostule accompany all traditional festivals, celebrations, and holidays, and hosts often prepare them during the time of Carnival and the Festivity of St. Blaise. In no time, an experienced cook will knead the dough, cut it, tie knots in the strips, and fry them, however for those less skilled, hrostule are a real venture and this workshop can make it much easier.


Dubrovnik gastronomy expert Jadranka Ničetić and Cordon Bleu confectioner Lucija Tomašić will hold a workshop on the preparation of the forgotten Dubrovnik cake Manđarica, which will begin at 11 am in the TIC at Pile. Manđarica is an old forgotten cake that in the past Dubrovnik's ladies prepared often and most happily. The particularity of this cake is rice flour, which with the addition of rose water, is made in pudding moulds. Rice for making sweets was milled with special small household millstones. This cake is mentioned by the writer Josip Bersa in his book Dubrovačke slike i prilike (Eng: Dubrovnik Pictures and Times) and the art historian Cvito Fisković also left us a written record of this cake.


On the second day of the Good Food Festival certified vegan chef and healthy food expert Tereza Poljanić will hold the first of two workshops titled ˝Hello Tereza˝ that will begin at 5 pm in the TIC at Pile. The workshop is about preparing vegetarian brunch or dinner. One more workshop by this young chef that lives in New Zealand and is a link between Dubrovnik and Slovenia will be held the third day of the festival.


The highlight of the second festival day is Dinner with Chef Ivan Pažanin which will be held beginning at 8 pm in the Porat restaurant. This Split chef with vast experience became well known by participating as a jury member and sharing his knowledge on the culinary show ˝Tri, dva, jedan – kuhaj˝ (Eng: Three, two, one – Cook). He studied in Split, worked on an icebreaker ship at 18 years old, cooked for the famous, travelled a lot, learned about and tasted specialties of many world cuisines, and now he prepares top dishes at the Trogir restaurant Don Dino. He finds inspiration in the sea, using locally sourced ingredients, especially olive oil. He often points out that ˝a plate needs a story˝. His style is based on the main ingredient and he likes for the plating to be representative and for everything to be concentrated around it. You will be able to enjoy his plate with a story this fall at the Good Food Festival, accompanied by wine from the Korta Katarina Winery and the pleasant guitar sounds of the classically trained musician Pero Škobelj.


All four days of the Good Food Festival feature the Healthy Food and Homemade Goods Fair, Days of Slavonian Cuisine at the Mimoza Restaurant, Afternoon Tea at the Hilton Hotel, the ˝Sights & Bites˝ Gastro Tour, special festival dessert promotions, In vino veritas wine tastings and special festival menus for 100 kuna in 28 Dubrovnik restaurants. This varied festival program truly offers something for everyone!
